Pizza Meat Loaf

This is a family favorite that can be put together in a hurry.  Serve with a salad and a whole grain roll for a healthy quick meal.  This recipe is also a good choice for a diabetic menu.

Serves:  4
Serving Size:  187 calories, 2g carbs, 24g protein, 9g fat, (4g saturated fat),
74mg cholesterol, 183mg sodium

NOTE:

*This recipe is OK for those on the LMD (Low Microbial Diet),
if on a dairy restriction – use lactose free cheese!

Ingredients

1 pound extra lean ground beef or ground turkey (7% fat) ¼ cup pizza sauce
¼ cup (1oz) grated, reduced-fat mozzarella cheese ½ cup thin sliced vegetables such as green pepper & onion


Directions

1. Spray a 9-inch glass pie plate with non-stick cooking spray.  Pack the meat lightly onto the pie plate.  Follow the directions below for microwave or conventional oven.

Microwave: Cover with wax paper and cook on high for 6 minutes, turning ¼ turn halfway through cooking time.  Drain any liquid.  Top with pizza sauce, cheese and vegetables.  Cook on high for 2 minutes until cheese is melted.

Conventional Oven: Preheat oven to 425 degrees.  Bake for 12-14 minutes.  Drain any liquid.  Top with pizza sauce, cheese and vegetables.  Return to oven for 5 minutes.
